Plantain bread is the love child of plantain and bread, indeed a heavenly match! It’s a guilt-free and nutritious alternative to traditional bread, made using ripe plantains for natural sweetness and moisture. Plantains are rich in complex carbs, fiber, vitamins (such as potassium, magnesium, and vitamin C), and antioxidants, promoting gut health and providing essential nutrients (Healthline). Incorporating plantain bread into your diet guarantees not only nutritional benefits but also a satisfying meal, as carbohydrates serve as the prime energy source for fuelling any physical activity, whether it’s running errands or going wild at the gym.

Inspired by Chef Don Smith, also known as @kitchenking101 on Instagram, I embarked on creating this savoury, soft, and fool proof plantain bread recipe.



2 ripe plantains (ripe with black spots)

3 cups all-purpose flour (I prefer bread flour for a chewier texture, and linseed for texture and added goodness)

1 tablespoon active dry yeast

1 tablespoon sugar

1 1/2 cups warm water (around 110°F or 45°C)

4 tablespoons olive oil or melted butter

1 1/2 teaspoons salt


  1. In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until the yeast is frothy.
  2. In another bowl, peel the ripe plantains and mash well.
  3. Once the yeast is activated, Add the plantain, olive oil or melted butter to the bowl and stir to combine.
  4. In another bowl, mix the flour and salt.
  5. Gradually add the flour mixture to the wet ingredients, stirring until a dough forms. (add a little flour or milk if needed to get the right doughy texture)
  6. Once the dough comes together, transfer it to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. You can also use a stand mixer with a dough hook attachment for this step.
  7. Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free place for about 1-2 hours, or until it doubles in size.
  8. After the dough has risen, punch it down to release any air bubbles and transfer it to a lightly floured surface.
  9. Shape the dough into a loaf or divide it into smaller portions for rolls or other shapes.
  10. Place the shaped dough onto a greased baking sheet or into greased loaf pans, cover them again, and let them rise for another 30-45 minutes.
  11. Preheat your oven to 375°F (190°C).
  12. Once the dough has risen again, bake it in the preheated oven for 25-30 minutes for rolls or 35-45 minutes for a loaf, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  13. Remove the bread from the oven and let it cool on a wire rack before slicing and serving.
